If you are looking for the perfect cookie to make for Valentine’s Day then you have found it! These bite sized shortbread cookies are buttery perfection and dipping them in chocolate takes them to the next level. They may look fancy but I promise they are easy to make! So go ahead and double the batch because no one can eat just one!
Ingredients:
- 1 lb butter
- 1 cup sugar
- 1 tsp almond extract
- 4 cups flour
- 1 lb chocolate (we love these ones!) melts or white chocolate melts (try these!)
Directions:
Cream the butter, sugar and extract together until fluffy. Add flour and mix well. Roll out dough on a lightly floured surface and cut into desired shapes. I love cute little hearts! This set of heart cookie cutters will let you customize how big or small you want your cookies.
Bake at 300 degrees for 25-30 minutes (start checking after 20 minutes and take them out when they are just barely browning.)
Once cookies have cooled melt chocolate according to package directions. Dip half of each cookie in chocolate and place on wax paper to cool. When you start running low on chocolate use a spoon to pour chocolate over cookies. Add sprinkles (my favorites are these, these and especially these) while the chocolate is still wet and then allow to set completely before packaging.
Try not to eat too many before sharing them with those you love!
Yields 3-4 dozen cookies depending on size.
